You know I love to experiment in the kitchen, and this week I stumbled upon a breakfast recipe so good, I made it two days in a row. It all started with a little inspiration from a Thai dessert called Kluai Buat Chi – basically bananas simmered in sweet coconut milk. I took that idea and ran with it, and ended up with a bowl of pure comfort that’s surprisingly healthy too!
Introducing my Spiced Banana Coconut Oatmeal with a hint of the tropics!
This isn’t your average oatmeal. We’re talking creamy oats infused with coconut milk and warming spices like cinnamon, cardamom, and nutmeg. Then, we take it up a notch by cooking tender, melt-in-your-mouth bananas right in the oatmeal, creating this incredible texture and flavor. A touch of butter and a drizzle of maple syrup at the end? Pure bliss!
But here’s the best part: This recipe is totally adaptable to your wellness journey.
- Diabetic in the house? Skip the maple syrup, or use a sugar-free alternative. My best friend loved it both ways!
- Watching your sugar intake? Adjust the brown sugar to your liking, or use a natural sweetener like stevia.
- Need more protein? Stir in some protein powder, or top with a dollop of Greek yogurt.
Speaking of wellness, let’s talk about the good stuff in this bowl:
- Oats: Packed with fiber to keep you feeling full and satisfied, plus they’re great for heart health and digestion.
- Bananas: A natural source of energy and potassium, which is essential for muscle function and blood pressure regulation.

Ready to give it a try? This recipe makes enough for about 3 people, but feel free to adjust the ingredient amounts to suit your needs. Here’s the recipe that has my family hooked (even my picky eater!):
Spiced Banana Coconut Oatmeal
Ingredients:
- 2 cups water
- ¾ cup coconut milk
- 1 ½ cups rolled oats
- 3 bananas, cut into bite-sized pieces
- Cinnamon, to taste
- Cardamom, to taste
- Nutmeg, to taste
- Vanilla extract, to taste
- Brown sugar, to taste
- Pinch of salt
- Butter, for serving (optional)
- Maple syrup, for serving (optional)
Instructions:
- In a saucepan, combine water, coconut milk, and spices. Bring to a boil.
- Stir in oats, reduce heat slightly, and simmer for a few minutes, stirring occasionally.
- Add bananas and cook until most of the liquid is absorbed.
- Sprinkle, sprinkle, sprinkle! Add brown sugar, any extra spices, and a pinch of salt to your liking.
- Serve warm with a pat of butter and a drizzle of maple syrup, if desired.
