Today’s WordPress prompt got me reflecting on my family’s top favorite meals, and let me tell you—it’s not a one-size-fits-all situation! Each person has their own go-to dish, and I’ve learned that cooking with intention means celebrating each family member’s unique tastes. So, here’s a little peek into our kitchen and some favorites that bring us together around the table.
1. Spaghetti & Meatballs – My Son’s Comfort Zone
If there’s one meal my son will devour without hesitation, it’s spaghetti and meatballs. For my picky eater, it’s a safe choice with flavors he knows and loves. Recently, we introduced him to cube steak—something I hadn’t enjoyed since I was a child—and, to my surprise, he loved it! So, between spaghetti nights and future cube steak experiments, there’s no shortage of comfort food on our menu for him.
2. Country Pork Ribs – A Treat for My Eldest
When my eldest son hears “country pork ribs” is on the menu, I can feel his excitement. I make these so tender they practically melt, pairing them with baked potatoes and a hearty green vegetable for balance. It’s a simple meal that just hits home and reminds us of the joy of a good, classic dinner. It’s one of those dishes that speaks to my heart as much as his because it’s something we can enjoy together.
3. Spiced Banana Coconut Oatmeal – My New Favorite Breakfast
A recent addition to our favorites list, my Spiced Banana Coconut Oatmeal, has been my morning obsession! Inspired by a Thai dessert, Kluai Buat Chi, this bowl of creamy oats, spiced with cinnamon and cardamom, has become my go-to for a satisfying start to the day. I’ve been enjoying it with eggs and bacon layered on top—let’s call it a “breakfast bowl of love.” Even my son, the bacon enthusiast, loves this combination!
