Welcome back to CherryCoBiz! Today, I’m thrilled to share with you a salad that has quickly become a favorite in my household. This Spinach & Berry Delight is not only bursting with flavor but also packed with nutritious ingredients that make it a perfect addition to any meal. Whether you’re looking for a light lunch or a refreshing side dish, this salad is sure to impress.

Spinach & Berry Delight Salad

Ingredients:

  • 10 oz fresh spinach
  • 1 red onion, thinly sliced
  • 2 Granny Smith apples, thinly sliced (tossed with a little lemon juice to prevent browning)
  • 1 pint fresh blueberries
  • 1 pound strawberries, hulled and sliced
  • 5 oz dried cranberries with 50% less sugar (adjust to taste)
  • 1 cucumber, thinly sliced
  • Candied walnuts (a couple of handfuls, crunched up)
  • Feta cheese (to taste)
  • BRIANNAS Rich Poppy Seed Dressing (to taste)

Instructions:

  1. Prepare the Ingredients:
    • Start by washing and drying the spinach, blueberries, and strawberries.
    • Thinly slice the red onion and cucumber.
    • Slice the Granny Smith apples and toss them with a bit of lemon juice to prevent browning.
    • Hull and slice the strawberries.
    • Crunch up the candied walnuts if you prefer smaller pieces.
  2. Combine the Salad:
    • In a large salad bowl, add the spinach as the base.
    • Layer in the red onion, Granny Smith apples, blueberries, strawberries, and cucumber.
    • Sprinkle the dried cranberries and crunched-up candied walnuts over the top.
    • Add the feta cheese to taste.
  3. Dress the Salad:
    • Just before serving, drizzle BRIANNAS Rich Poppy Seed Dressing over the salad. Toss gently to combine, ensuring the ingredients are evenly coated with the dressing.

This salad is a perfect blend of sweet and tangy flavors, with the poppy seed dressing adding a delightful richness to the mix. There’s no specific amount to use for each ingredient—adjust to your taste. I like to make big salads that last a few days for my family, but you can easily scale this recipe down if needed.

Why You’ll Love It

The combination of fresh spinach, vibrant berries, crunchy walnuts, and creamy feta cheese, all brought together with a rich poppy seed dressing, makes this salad a standout. It’s not just delicious—it’s also packed with nutrients, making it a wholesome choice for any meal.

Note: The picture above is AI-generated. My handsome husband made this last salad, and neither of us were thinking about creating content at the time. However, I wanted to showcase how amazing this salad really is. I will try to get more actual pictures as this section grows.
