And when I say “naughty pleasure,” I mean something so indulgently good that you just have to give yourself permission to have seconds (or thirds)! Let’s talk about the Honey-Glazed Jiffy Cornbread update, now featuring creamed corn—and it is everything.

At the time, I was thrilled with how it turned out, but let me tell you, this latest version—with creamed corn—is a serious game-changer. It’s softer, richer, and oh-so-much-more indulgent. It brings a whole new level of moisture and flavor that I didn’t know cornbread was missing until now.

Let’s Be Honest: Lima Beans Are Stubborn, But Cornbread Saves the Day

If you’ve read my most recent blog post about the Stubborn Lima Bean (Learning and Growing Through Intentional Cooking: The Stubborn Lima Bean Saga), you know that not every dish turns out perfectly, even when you put all the love and intention into it. While that dish had some serious flavor, those beans just weren’t playing nice. I’m determined to perfect that recipe, but thank heavens for a side dish that went off without a hitch—my creamed corn version of Honey-Glazed Jiffy Cornbread.

Imagine this: I’m tasting the lima bean stew, thinking, “Well, we’ll get ‘em next time,” and then I take a bite of the cornbread, and suddenly everything feels right in the world again. The lima beans may have let me down, but this cornbread lifted me back up. In fact, I loved it so much, I went back for seconds—and everyone at the table agreed!


Why Creamed Corn Makes the Difference

The creamed corn adds a lovely richness to the cornbread that I didn’t know it needed. It’s like it takes everything good about cornbread and turns the volume up to 11. The texture is perfectly soft and moist, without being overly sweet. It pairs beautifully with savory dishes (yes, even the stubborn lima beans), but it’s equally delightful on its own, warmed up with a drizzle of butter.

This recipe update doesn’t stray too far from the original, but these small tweaks made it even more of a star on the dinner table.


Updated Recipe: Honey-Glazed Jiffy Cornbread with Creamed Corn

Ingredients:

  • 2 boxes Jiffy Honey Corn Muffin Mix
  • 1 can (14.75 oz) creamed corn
  • 1/3 cup sour cream
  • 1/3 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup milk (optional, depending on how moist you want it)
  • For the Honey Butter Glaze:
    • 1/4 cup butter, melted
    • 2 tablespoons honey
    • A pinch of salt

Instructions:

  1. Mix the Ingredients: Combine the Jiffy Honey Corn Muffin Mix, eggs, sour cream, creamed corn, brown sugar, vanilla, and salt. Stir until just combined.
  2. Preheat the Pan: Preheat your skillet or baking dish in the oven. Once hot, butter it generously to achieve that crispy, golden crust.
  3. Bake: Pour the batter into the prepped pan and bake according to the box instructions, adding an extra 5 minutes for good measure.
  4. Get Your Honey Butter Glaze Ready: While the cornbread bakes, mix the melted butter with honey and a pinch of salt.
  5. Glaze and Broil: After the cornbread is baked, drizzle the honey butter glaze over the top and pop it under the broiler for 1-2 minutes until it’s golden brown and irresistible.

Cornbread + Butter Beans = A Match Made in Heaven?

Now, I know what you’re thinking: “When’s that lima bean dish coming back?” Don’t worry, I haven’t given up on it. If anything, I’m more determined than ever to get it just right. But next time, you better believe I’ll be serving it with this cornbread—because even stubborn lima beans deserve a little love from a magical side dish.

I’ll be tweaking the butter bean stew (yes, perfection takes time), but you can expect a revised version soon. And with that revision, I’ll most certainly be pairing it with more of this cornbread—because when in doubt, cornbread makes everything better!
